From September to June “material culture” cooking courses are held (lasting three days to 1 week) which can be part of the vacation and introduce the participants to the food habits of Cilento.
A few recipes, much knowledge about cooking and preservation techniques, the harmony of tastes and colours, the organoleptic characteristics of ingredients, the rituals and celebrations for the seeding and the harvest. A rediscovery of time and seasons as fundamental ingredients of every single dish as well as of... life.
“Theory” lessons held by skilled housewives and passionate storytellers of ancient rituals, “play days” in the places where ingredients are grown: the most beautiful vegetable gardens, the most luxuriant vineyards, the multitude of figs, the fields of wheat, the centuries-old olive trees.
A special class of the “school” is focused on pizza, to learn the secrets of the dough, the temperatures, the several possible dressings for a dish that – in the Cilento area – has its peculiar version: pizza baked in square baking trays and covered with goat cheese and long- cooked tomatoes, so to become a kind of cream.
Courses which award a certificate and can be the start of a currently highly demanded job.
